Muffins and Quick Breads

Classic Bran Muffins

A delicious source of fiber, I don't know why we hadn't added these to our menu sooner. We use wheat bran and whole wheat flour along with raisins to make these muffins a nutritional powerhouse. We can add oat bran or flax meal to give them a further boost.

Banana Carrot Muffins

In search of a good breakfast muffin, we came across this recipe. Banana-carrot is a combination you don't see very often though they blend beautifully when you dress them up with a little ginger.

Nutty Pumpkin Bread

Spread slices of this moist, spice bread with cream cheese and serve with tea or coffee for a special breakfast.

 

Olive Oil Pumpkin Bread

Olive oil not only adds an incredible depth of flavor, but used in place of butter or shortening, it makes quick breads better for you by supplying healthy fat and antioxidants. Pumpkin seeds add a nice crunch on top of the bread. This can easily be made into muffins.

Cinnamon Puffs

In clothes, in design, and in baking: simple and classic go hand in hand.  If it were possible to say that a breakfast muffin could personify understated elegance, this recipe would serve as proof.  There is just a nuance of nutmeg to perfume the muffin, and it’s a perfect foil to the cinnamon sugar on top.

Chocolate Chip Zucchini Bread

After searching for a chocolate zucchini bread recipe that didn’t require a lot of oil, we came up with this winner.  Your kids will really like it and it’s great to be able to enjoy something that’s healthy and chocolaty at the same time.

Pear Walnut Bread

Did you know that pears have the unusual characteristic of being unable to ripen until after they’re picked?  As a departure from banana bread, try this Pear Walnut Bread, which features pears and whole wheat flour.  Using plain yogurt and buttermilk makes is surprisingly low in fat, while the pears keep it moist.

Country Corn Bread

Buttermilk lightens the texture of this corn bread and adds a rich and tangy flavor. 

Zucchini Loaf

This not-too-sweet tea cake is dotted with apricots, raisins and walnuts and has a tender crumb.  The key to keeping it moist is, well, that's a secret. 

Garden Harvest Cake

Here's another riff on zucchini bread that adds carrots and apples to the mix, eliminating the need for excess butter and oil. It's great for breakfast or an afternoon snack.

Banana Bread

A perennial favorite -- great with a cup of coffee for breakfast or as an addition to your lunch pail. 

Banana-Coconut Bread with Macadamia Nuts

If you like Banana Bread, this will raise your appreciation to new heights when you try it with added macadamia nuts and toasted coconut. 

Marbled Chocolate Banana Bread

We didn't think there were too many more ways to improve on Banana Bread, but this one convinced us otherwise. A swirl of chocolate makes this tasty without being decadent.

Gingerbread with Lemon Glaze

The bite of gingerbread blended with a tangy, lemon glaze is a great combination. 

Irish Soda Bread

Irish hospitality just wouldn’t be the same without fresh bread and strong, delicious tea.  A low fat version of soda bread, the taste is similar to a scone, without the guilt.

Walnut Strawberry Rhubarb Bread

There are few quick breads that have been as universally well-received as this one.  The taste is simply divine, with the slight tartness of the rhubarb offset by sweet fresh strawberries.

Peanut Butter Energy Bars

Looking for a portable snack you can feel good about? Instead of those "energy" bars in shiny packages, here's a choice that free of additives and preservatives and full of good stuff like oats, whole wheat flour, peanuts and chocolate chips. They're great for a quick snack or breakfast on the go.

Blueberry Muffins

There's nothing better for a quick breakfast or snack.  These muffins are moist, delicate and packed with berries. 

Blueberry Oatmeal Muffins

This family favorite gets a fiber and grain boost with the addition of whole wheat flour and oatmeal.

Mocha Muffins with Chocolate Chips and Pecans

Ok, so maybe these are more like a cup cake than a muffin and should be served as dessert instead of breakfast, but that doesn’t make them any less delicious. 

Low-Fat Strawberry-Cinnamon Muffins

Low-fat muffins often seem to mean low-flavor, too.  These break the mold, with a hint of cinnamon and a squish of strawberry jam in the middle.

Cranberry Walnut Muffins

This is a tender, moist cranberry muffin brightened with a tad of orange flavoring.  We like to add lots of fruit and nuts, which add weight and prevent a very high rise.  We go for taste and texture over altitude and we hope you like the results.

With fresh cranberries appearing in the stores, now is the best time to take advantage of the bright splash of color and delightful flavor they bring to these tangy muffins. 

Tender Corn Muffins

Not just for breakfast, these tender corn muffins won't set off sugar alarms, have a pronounced but not overwhelming cornmeal flavor and a moist and tender crumb.  Best of all, they're topped with a crunchy, golden, craggy muffin top.

Lemon Poppy Seed Muffins

Grated lemon zest and the crunch of poppy seeds give these muffins their zing. 

Whole Wheat, Oatmeal and Fruit Muffins

With four whole grains and three dried fruits, these muffins are a great way to start your day.

Pumpkin, Pecan & Chocolate Chip Muffins

There’s got to be several major food groups in these muffins.  The pumpkin provides lots of beta carotene and the orange color of autumn.  The chocolate chips make these a great afternoon snack, though we like them with coffee for breakfast. 

Spiced Apple Muffins

These muffins are beautiful, light and chock full of apples. We can make them with some whole wheat flour and you'll get all the fiber without changing the taste. They're great with walnuts, raisins or dried cranberries. For a special treat, we can add butterscotch chips. Be sure to ask your chef if you'd like any of these modifications.

Apple Zucchini Muffins

Here’s a muffin that’s very, very low in fat, made with no butter and no oil.  We add a bit of oat bran; a nutritious touch.  The zucchini, apples and yogurt all contribute to the moistness of the muffins, which are flavored with the tasty pairing of vanilla and cinnamon.

Pumpkin Cranberry Muffins

These incredibly moist muffins get a burst of sweet and sour notes from the cranberries. 

Gingered Apricot Oatmeal Muffins

This is a perfect muffin – not too sweet, chewy in a friendly sort of way, tastes better the second day and freezes beautifully. We couldn’t ask for more.

Applesauce Snack Cake

At first blush, you’ll think you’ve seen this before – a cake with apples.  Here, we triple the flavor by using applesauce, dried apples and apple cider for a truly moist and delicious snack.
