Chicken Nuggets have become a favorite of Homemade Today clients.  For a change of pace, try this variation on nuggets, seasoned with parmesan cheese. 

Coconut Chicken Nuggets

Do you want another way to get your kids to eat fresh chicken? Well, we found that coating it in coconut really works. We like these nuggets sauteed in a little olive oil but they can also be baked if you want to keep the fat down.

Cajun Style Chicken Fingers

No one ever seems to tire of chicken fingers.  In this incantation, we mix crushed peanuts in the coating, and season them with Cajun spices to add extra flavor without too much heat.  These are also great for an easy lunch – just roll them in a flour tortilla and add lettuce, tomato and salsa.

A tasty version of a Chinese restaurant favorite, we make our Kung Pao Chicken with thighs to give it great flavor and go easy on the oil to keep it light and healthy. Crushed red pepper flakes give it an authentic Kung Pao kick and can omit these to make the dish more kid-friendly.

Braised Chicken all'Arrabbiata

All'Arrabbiata means "in an angry style" in Italian. That's code for "spicy", which we get in these chicken legs by simmering them in a tomato sauce seasoned with poblano peppers and crushed red pepper. This dish is wonderfully tempered when served over polenta.

Chicken (or Veal) Parmesan

This quintessential Italian favorite is usually a soggy mess floating in oil and cheese.  While there’s something to be said for a gooey, cheesy dish, we prefer the chicken to maintain its crunch, while the cheese and sauce add lots of flavor.  This dish fits the bill beautifully.

Classic Chicken Curry

Perfect when served with rice or bread, this is a traditional chicken curry and is the first Indian dish we’ve added to our repertoire.  With spices including cardamom, coriander, cumin and Garam Masala, its got great flavor without being too spicy. 

Turkey Cutlets and Black Beans with Mojo Sauce

Mojo (pronounced MOE-hoe) is a Caribbean and Latin-American garlic, chile, and fruit sauce that pairs well with meat, poultry, and seafood. Here, it’s made with orange and lime, so it’s both sweet and tart. And yes, we can turn down the heat and we can make this with chicken instead of turkey.

Chicken Fajitas

The best chicken fajita recipe requires special handling. We'll briefly marinate the chicken to create a bright, unadulterated tang and roast the peppers and onions to bring out their sweetness. You can assemble these yourself with salsa and sour cream for a favorite Mexican meal.

Baked Chiles Rellenos

Tex-Mex food can be high in fat and calories, but delicious, so we recreated the flavors in a lightened version of this dish. Rather than stuffing the chiles with cheese and deep frying them, they’re filled with chicken, zucchini and a touch of cheese, then baked in a tasty sauce.  And don’t worry, these are very mild chiles so heat is not a problem.

Curried Chicken Penne with Fresh Mango Chutney

The heat of the curry in this dish is tempered by the sweetness of mango and coconut milk.  If you’re looking for low-carb, we can omit the pasta.

Glazed Balsamic-Orange Chicken

This is a great dish for our clients as a little time in the refrigerator allows the chicken to absorb all of the lovely contrasting flavors in the sauce. We like to use balsamic vinegar for sweetness, chicken thighs for heartiness plus red and yellow peppers for color.

We never tire of meatballs and their many incantations. Lemon and rosemary pair perfectly with turkey an we'll make a velvety-rich sauce that is wonderful served over pasta or mashed potatoes. We like these with lean ground turkey and could also use ground turkey or chicken breast..

Santa Fe Turkey Meatballs

These lightly spiced turkey meatballs with melted cheese centers are a nice change of pace from traditional meatballs.  They’re served in a salsa-inspired sauce, and are great when stuffed into a tortilla.    

Turkey Veggie Meatballs

If you’re not convinced that ground turkey can substitute for ground beef, this recipe will change your mind.  Adding carrots and zucchini to the mix helps retain moisture and adds flavor.  Served with marinara sauce over spaghetti, you’ll swear it was the real deal.

Arroz con Pollo

Arroz con Pollo (Rice with Chicken) is the Spanish cousin of Paella.  As the rice cooks, it grabs a ton of flavor from its companions in the pot: chicken pieces, sausage, cumin, paprika, bell pepper, garlic and tomatoes.  This dish tastes even better after spending a night in the refrigerator.

Chicken Sauté with Asparagus, Cherry Tomatoes and Lemon

Turkey Meatloaf with Pesto

For a delicious twist on traditional meatloaf, try this turkey version.  Pesto and oregano add lots of flavor.

Turkey Stuffed Portobello Mushrooms

Reminiscent of the traditional sausage-stuffed mushroom appetizer but healthier, these gigantic stuffed mushrooms are enough for dinner. Make it a meal: serve with fresh tomato wedges tossed with fruity olive oil, oregano, salt and pepper plus a hunk of crusty bread.

Burgundy Chicken

More of a braise than a stew, this chicken simmers in burgundy, imparting rich flavor and color.  Don't worry, the wine evaporates as the dish cooks.

Chicken Larb

Larb is a ground meat dish you'll often find in Thai restaurants. It's served warm with fresh lettuce leaves in which you wrap the meat. Ours is seasoned with fragrant lemongrass, chilies and a sweet and tangy sauce to give it an authentic Thai flavor.

Moroccan Chicken Thighs

These thighs get their distinctly Moroccan flavor with a combination of coriander, cumin, paprika and dates. We served this to guests for dinner and it was definite hit. The thick sauce is wonderful when served over couscous.

Chicken Satay with Zesty Asian or Peanut Dipping Sauce

As you would guess, we’re always on the lookout for great recipes, and this one certainly qualifies.  We start with boneless chicken breast, slice it thinly, and marinate it in spiced coconut milk.  A brief sauté keeps it tender and moist.  The secret’s in the sauce – choose either the Zesty Asian or Peanut Dipping Sauce and you’ll never look at chicken the same.  We can adjust the heat of the sauce and also do this dish with pork.  Please note that the sauces are best eaten fresh, though the chicken can be frozen.

Chicken Stuffed with Goat Cheese and Garlic

Simmered in a zesty marinara sauce, these lean breasts are stuffed with an herbed goat cheese and a touch of garlic.  They hold together in beautiful bundles, with just enough of the cheese slipping out to season the savory sauce.

We make our enchiladas this color by using green enchilada sauce, which has very mild green chili peppers and cilantro. It's all blended so your kids won't know what they're eating but they'll love the flavor.

Blueberries have been touted as one of the super foods – chock full of great antioxidants and phytochemicals (those are things that are good for you!).  Simmered in a terrifically seasoned chutney, blueberries are a great partner for sautéed chicken breasts.

Sage and butter is an absolutely classic combination. We keep this dish light by using boneless chicken breasts and adding fresh thyme to the sauce to ramp up the flavor.

Buffalo Chicken Quesadillas

This fresh-flavored recipe uses a sauce made from cilantro and parsley to get its vibrant green color.  We add cardamom and coconut milk for authentic Indian flavor and like it best when made with chicken thighs, but we can use breast meat instead.

Cilantro Citrus Chicken

This time we start with a marinade made bright green by fresh parsley and cilantro.  A combination of orange and lime juices tenderizes the boneless chicken breast, keeping it extremely moist when cooked.  If you have any leftover chicken, it’s wonderful when tossed with mixed greens for a healthy salad.

Chili with Chipotle and Chocolate

Smoky chipotle chiles (dried, smoked jalapeño peppers) and earthy chocolate add depth and richness to chili in a surprising combination that really works.  We keep this healthy by making it with ground turkey breast.

We think that skinless, boneless chicken thighs are a little more flavorful than white meat, so they need fewer ingredients to taste great.  We like these served with roasted potatoes and a tossed salad.

The Asian flavors in our stir fry come from a bright mix of fish sauce, oyster sauce and fresh basil, with just a touch of oil.  Cashews add heart-healthy monosaturated fat and fresh asparagus is always a treat.

Chicken drumsticks, complete with their own handles, are terrific for dinner. The Tex-Mex flavoring gives them a great flavor without too much spiciness.  Try serving with your favorite rice or black beans for a wonderful dinner.
